Broccoli and Rice
Serves 4. 7 WW points per serving.
1 TBS Olive Oil
1 TBS Butter
1 Small onion – finely chopped
1 TBS Herbes de Provance
1 cup Rice – basmati or texmati
2 cups Chicken broth
1 inch strip Lemon Peel
2 pounds Chopped broccoli florets
2 oz Grated Romano or parmesan cheese
Heat oil and butter in a large saucepan or saucier, until butter is melted. Sweat onion until soft and translucent. Season with salt, pepper and herbes de provence. Add rice and sauté until rice browns and smells nutty. Add broth and lemon peel. Bring to a boil. Stir once and lower heat to simmer. Lay chopped broccoli over rice, cover and let simmer 15 minutes. Remove from heat and let sit, covered for an additional 15 minutes. Uncover, remove lemon peel and add cheese. Lightly toss with fork to combine. Serve immediately.
